Strawberry Icebox Cake

I love trying new recipes. My Pinterest board is over flowing with fresh new ideas. Keeps a variety in our life. My family loves strawberries ... so when I came across this one I had to give it a whirl. 

No Bake Strawberry Icebox Cake

Ingredients:
3 lbs. fresh strawberries, sliced 2 (8 oz.) tubs fat-free whipped topping (or use regular or light) 1 (14.4 oz.) box graham crackers 1/4 cup milk chocolate chip morsels

Directions:
1. Spread a small amount of whipped topping on the bottom of a 9x13-inch baking pan. Place 5 graham cracker sheets down the middle and break 2 more sheets into crackers to fit down the sides. Lightly cover the top of the graham crackers with more whipped topping and then a layer of sliced strawberries. Repeat three times, until you have four layers of graham crackers (you may be a few crackers short on the top layer, but that's ok). You'll end with a layer of strawberries on top.

2. Place milk chocolate chip morsels in a plastic bag. Microwave in 10 second intervals until melted. Snip the end of the plastic bag and drizzle chocolate over top of cake.

3. Refrigerate covered for at least four hours, or until the crackers have softened completely. Cake will last well for two days. It will still be good on the third day, but the strawberries will start to get juicy and leak into the whipped topping. It will still taste good, but it won't be as pretty.

Did I mention it is extremely simple and very crowd pleasing!?

Not Me Monday

Good Morning ya'all. Thanks for stopping by to see what is going on in our corner of the world. This momma most certainly is not functioning on only 5 hours of sleep. Oh no...not me! HA! I wish. I stayed up waiting for our oldest son (16 years old) to come home. I cannot sleep until I know he is safe and sound back home. Then the alarm went off MANY times... note to self to move the alarm clock so I cannot push the snooze button. That little thing is just so nifty. I love it. But in all reality I should just wake up when the alarm goes off the first time!! 

Today the start of the Excel program at the high school. Blaine joined. So we headed out the door at 6am. This is a great program usually offered at the school with Bellin health. It will help Blaine in sports that he chooses to join. Which usually is football and basketball. 

Term 1 for Kaden's summer school began today. So waking sleepy head up this morning was no easy task. I most certainly did not bribe him with a little reminder that we are one day closer to our annual trip to WI Dells. Oh no not me! HA! We waited for the bus to pick him up. First year they offered busing. Kaden loves to ride the bus. Well, after standing out there for 10-15 minutes I called the school and low and behold the connection between the bus garage and school wasn't made so I had to drive him in to town. No problem!! Had to pick Blaine up anyway. Kaden was sad he really enjoys riding the bus.  :/ 

My agenda today is painting the bathroom and finally finishing that project along with mounds of laundry of course. For a family of five people... laundry never ends. Especially when you wash bedding and all that fun stuff! Call me crazy, but I love laundry! I know nuts huh? 

Time to wrap this up and head out the door again this morning to take Trent & Blaine to work with Grandpa. They do lawn maintenance and landscaping with gramps. A job they all enjoy. Gramps is waiting for them to get a little older and take on the jobs. As he is getting older (70 this fall) and it's becoming way too much for him!!

Oh dear never even thought of what I should make for dinner? ... I better get offline and start crossing things off the list. :-) Hope your day is a fabulous one!

Kaden graduated from Kindergarten

This momma cannot believe it is true. Our youngest boy graduated kindergarten. He has learned so much in this past year of school... he continues to amaze us each and every day.
My favorite thing he learned was reading. All the years of him listening to me read... now I'm enjoying listening to him read to me... most likely even more then he will ever understand.

 Kasiah came to watch Kaden receive his diploma. They have a special sister/brother bond. Always have and always will. We love our Kasiah.

 Mrs. Kerr the best kindergarten teacher ever! hands down. Blaine and Kaden both had her as a teacher and loved her. I told Kaden that Blaine sat on her lap 10 years ago. He thought that was pretty cool.
 Kaden and his cousin Teri. I love that he is close with his cousins. That is very important.
Our class of 2025 future graduate.... thankfully that will be a long time from now!

Blaine and his little brother. Sadly, Trent wasn't able to take part in the ceremony as he was in Wisconsin Dells having a whole heck of fun on water slides and roller coasters!!


He was pretty excited to have all the special recognition for his accomplishments.

I cried during graduation for many reasons. I cannot believe he is off to 1st grade already. Which means Trent will be in high school in two years, and that of course, means Blaine will graduate high school in two years! They are all growing up and there is nothing we can do to stop it... so mine as well savor each moment you have with them and hold them tightly!!!

D I Y ideas


As you may or may not know I am totally and utterly addicted to Pinterest. Who isn't right? Well, as I was in pinning heaven I came across this little beauty. Well, I think it's a beauty because it screams my style!! Those cute little burlap bag pillows are what I'm raving about. And I happen to have some extra ones laying around in the basement. So, I will be making these very soon. I plan to make four. Two for both couches. I love D I Y projects. I have a long list! Ha! My Pinterest says it all. Which reminds me... if you are also on Pinterest and check out my boards and follow me. I might just follow you back!!  Last but not least... I came across another sweet idea for all those burlap bags we have laying around from an antique store, a while back.

Let's play ball

Friday May 31st we headed to the Timber Rattler Stadium to watch the T-Ratts play some ball!! Kaden & Trent really had a good time. Grandma, Grandpa, Uncle JC, Auntie Shelly, Michael, and Bella were all there as well. My nephew Michael was celebrating his birthday with several friends. Although the T-Ratts ended up losing to the Chief's we really enjoyed the game, laughs and good conversation. Friday nights they have fireworks after the game then the kids can go down and run the bases. The boys had souveniour towels and hats autographed. 

These two fell asleep on the way down...
